Sweet Potato Bake

Oh my word, friends. This dish is famous in our family as a holiday staple. It it a side dish? Is it a dessert? Who’s to say! Regardless of what you call it this outstanding sweet potato casserole will quickly become a favorite with your family too.

Sweet Potato Bake

Ingredients
  

To make the filling

  • 40 oz can sweet potatoes, drained and mashed
  • 1 cup granulated sugar
  • 4 eggs
  • 1/2 cup evaporated milk
  • 1 tsp pumpkin pie spice
  • 1/2 tsp salt
  • 2 1/2 tbsp unsalted butter
  • 5 tsp vanilla extract

For the topping

  • 1 cup brown sugar
  • 1 tsp pumpkin pie spice
  • 1/2 cup all-purpose flour
  • 1 cup chopped pecans or walnuts
  • 1/2 cup melted unsalted butter
  • 1 tsp vanilla extract

Instructions
 

  • Pre-heat oven to 350
  • In the bowl of a stand mixer, combine all filling ingredients
  • Pour into a prepared baking dish & set aside
  •  In a medium bowl combine the topping ingredients. Crumble over top of potato mixture.
  •  Bake at 350 for 35 minutes or until mostly set. It will be a little jiggly in the center when done, but will firm as it cools.
