I agree, Lloyd. I think risotto is great for exactly that reason. That extra stirring time gives me the chance to get everything else ready for the meal.
Thanks for reading!

I made this recipe for about 40 women at a bridal shower and it was awesome! I cut the garlic in half and added avocado and it was so good. For a meal I added grilled chicken!

I just made a risoto recepe this morning. I think people tend to make it harder than it has to be. Once you saute everything and are cooking your rice just add extra liquid it buys you time. The rice still takes, based on your taste, 15 min. To cook. Thanks for the recipes!

H Juliana,
I added the lemon zest just for a bit of zing, it doesn't really make the buttercream tart at all, just pure sweetness. I didn't strain the blueberry puree when I made these, which is why the photo shows some little blue dots in the frosting, but you certainly could if you wanted the buttercream more smooth.

I hope you enjoy these! happy brithday to your little one!

Thank you!!! My daughter also loves blueberries (in fact, they're one of the only things she'll eat these days) and since she's turning one next week I've been searching for a good recipe. This looks perfect!
Questions:
- Is the purpose of the lemon zest to lend a tart flavor? I'm wondering if straigh-up sweet would be better for her first cupcake experience.
- Is the blueberry puree supposed to be strained?
